Ingredients:
500g damsons, pitted
250g apples, peeled and chopped
200–250g dark brown sugar (adjust to taste)
500ml water
2 cinnamon sticks
3–4 whole cloves
Optional: 1 small knob of fresh ginger, sliced
Optional: Blackberries or blackcurrants for extra colour
Optional: Manuka honey for serving
Instructions:
Combine damsons, apples, sugar, water, cinnamon, cloves, and ginger in a saucepan.
Bring gently to a boil, then simmer for 25–30 minutes until the fruit is soft and fragrant.
Mash the fruit gently and strain through a fine sieve or muslin into sterilised bottles.
Add blackberries or blackcurrants during cooking if desired for a deeper colour.
Keep refrigerated or process for a longer shelf life.
Serve hot with a teaspoon of Manuka honey or chilled over ice, sparkling water, or cocktails.

100ml cordial, 50ml dark rum, 50ml apple juice, ice, and a cinnamon stick. Garnish with apple slices cut like tiny bats.
Vampire’s Kiss
75ml cordial, 50ml vodka, 75ml soda water, crushed ice, and a few blackberries. Float a slice of dehydrated orange for eerie elegance.
Haunted Autumn Cooler
Dilute 75ml cordial with 75ml sparkling water, add 25ml spiced rum, a splash of cranberry juice, ice, and star anise for a lightly spiced, visually striking drink.
Goblin’s Garden
50ml cordial, 25ml apple brandy or calvados, 100ml tonic water, crushed ice, and a few slices of fresh apple. Garnish with a sprig of mint and a tiny plastic spider for mischief.
