I can’t lie, have a thing for KitKats. I always have had, but especially since they were my obsession during Toby’s pregnancy. I could eat them by the bucket load, and I feel pretty much the same love for brownies… chewy, gooey and chocolatey… what more could you want?

This recipe is a perfect way to combine both my loves, with a chewy brownie encasing bites of delectable KitKats!

KitKat Brownies

My only suggestion here, to make this slightly better, is that you make a batch of these when you know that no one else is going to be around… then eat them all. Every last one. Sharing is entirely optional with these delicious treats!
 
Ingredients
 
For the Brownies
150g Butter
1 3/4 cups Light brown sugar
3/4 cup Cocoa powder
1 cup Plain flour
1 teaspoon Bicarbonate of soda
4 Eggs
1 teaspoon Vanilla extract
4 packs 4 finger KitKats
For the Ganache
200ml Double cream
1 tablespoon Golden syrup
200g Dark chocolate
 
Instructions
 
For the Brownies:
1. Pre-grease and line the bottom of an 8 inch X 8-inch tin.
2. Mix the butter and sugar, until pale and creamy. Add the eggs, flour, cocoa powder, salt and baking powder. Once mixed blend the vanilla extract into the mixture, then pour half into the pre-lined 8-inch tin.
3. Top the mixture with the KitKats, and then pour over the remaining brownie mix.
4. Bake for 30 minutes until it is firm to touch over the top and still fudge-y in the middle.
5. Leave to cool completely, then top with the ganache.
 
For the Ganache:
1. Put all the ingredients in a pan, heat through until the chocolate is melted and then whisk until the mix thickens and get glossy.
2. Wait until slightly cooled and then pour over the brownies. Set aside to set and then slice.
