Amaretto Coffee Brownies

This is my first entry to We Should Cocoa a monthly blogging event organised by Choclette of Chocolate Log Blog and Chele of Chocolate Teapot fame.  This month the event is being hosted by The Kitchen Maid.

The only rule is that the recipe cooked or baked must contain chocolate and, this month, coffee. Easy? Sure. I love both of them.

I went for a really simple bake this time – I’m easing myself back into this blogging lark gently.  Quick and easy yet super flavoursome was what I desired and what could be better to satisfy my needs than brownies?

These bites of chocolate heaven are just perfect for weekend baking, quick mid week baking when you need something to serve for pudding but don’t have much time or energy, or as an impromptu bake when you have unexpected visitors arriving; who am I kidding? These brownies are perfect anytime.

Who doesn’t like brownies? Who can resist a brownie? Hands up all those who answer yes to those questions. I have to say I have yet to meet anyone who doesn’t like a gooey, squidgy, sweet but deeply chocolatey brownies; given the addition of amaretto coffee, they can only reach new heights of gorgeousness.

I would never drink a flavoured coffee, but, in baking they can really help give depth of flavour.  Here I used a little Boaters Amaretto Coffee to impart a subtle flavour and give the chocolate a lift.

Amaretto Coffee

Rich in flavour, dense and moist. The top will be crispy, crackling away to reveal the dense, super moist interior with that wonderful hint of coffee and almonds.

Serve these super squidgy treats with a good espresso or a glass of chilled amaretto liqueur.

Simply gorgeous!
