Singapore-Style Laksa: My First Ever Recipe Post — A Nostalgic Journey with a Modern Twist ???

It’s funny looking back at this post — my very first recipe on Culinary Travels! Over the years, my love for laksa has only deepened, and I’m thrilled to share an updated, easy-to-follow version of this iconic Singaporean dish with you today.

Laksa is a fragrant, spicy noodle soup that perfectly balances creamy coconut milk, zesty spices, and fresh herbs. Whether you’re a seasoned cook or a curious beginner, this recipe will guide you to make an authentic, comforting bowl of laksa right in your own kitchen.


Ingredients

Laksa Broth

  • 400ml coconut milk

  • 600ml chicken or vegetable stock

  • 3 tbsp laksa paste (store-bought or homemade)

  • 1 tsp fish sauce (optional)

  • 1 tsp sugar

Noodles & Protein

  • 200g rice vermicelli noodles

  • 200g cooked prawns or chicken, shredded

  • 100g firm tofu, fried and cut into cubes

Garnishes

  • Fresh coriander leaves

  • Bean sprouts

  • Sliced red chili (optional)

  • Lime wedges

  • Hard-boiled eggs (optional)


Instructions

  1. Prepare the Broth:
    In a large pot, heat a splash of oil over medium heat. Add the laksa paste and sauté for 2 minutes until fragrant. Pour in the coconut milk and stock, stirring well to combine. Bring to a gentle simmer.

  2. Season the Soup:
    Add fish sauce and sugar to taste. Let the broth simmer for 10 minutes, allowing the flavors to meld.

  3. Cook the Noodles:
    Meanwhile, soak the rice vermicelli in hot water according to package instructions until tender. Drain and set aside.

  4. Assemble the Laksa:
    Divide noodles between bowls. Top with prawns or chicken, tofu cubes, bean sprouts, and coriander.

  5. Serve:
    Ladle the hot broth over the noodles and toppings. Garnish with sliced chili, lime wedges, and hard-boiled eggs if using. Serve immediately.
