Tonight we had the most glorious version of a deconstruction Spanish omelette – Spanish Sweet Potato with Chorizo from Diana Henry’s latest book Cook Simple.

This is the second time I’ve cooked from Cook Simple and again it was a complete success, with only two minor alteration made in that I added one teaspoon more sweet paprika than specified and fried a little spinach off with the chorizo to add a little green to the meal and boost the iron level.
Basically all the meal consists of are some roast vegetables, fried chorizo and bacon pieces and a fried egg – so utterly simple and yet so tasty. A true fiesta of colours and tastes on a plate.
Next time I think I’d be tempted to use chunkier pieces of chorizo to give more texture but other than that there were no complaints.
